Steve, I reckon I could hold a 3 hour conversation about the 2 cameras and never identify things that are "lacking" in either because to me they are 2 completely different cameras built for different purposes.
Processing requirements are always going to be a learning curve when you go to a different camera so long as you keep using the prehistoric complicated and sloth like a$obe products, conversely I find the processing requirements for D800 files to be shorter if anything as they require less doing to them and what you do end up doing is done at a far more accurate level due to the higher resolution. Mind you, I am referring getting them ready for print not just for web usage where they are wasted in my opinion.
If you can only have the one body and from what I know of your shooting and the ultimate output I would stick with the D700 as it simply does a great job already.
