- Implement new menu on the first day of work without a hitch - Success
- Make it physically through the week - Success...but only JUST
- Mentally - Screwed
- Leaving the kitchen in the hands of a Chef who's answer to everything is "too easy bro", and "I'm sure we will be ok Dan" when he hasn't seen the presentation of any dishes and the concept has completely changed - FINDING VERY HARD TO DEAL WITH!!
Can someone remind me again why I keep doing this to myself 4 weeks out from christmas?
